Dear friends from the green island. I guess you have considered all options already. I just found out for myself that there are direct ferries from Ireland to France. That would lead to a longer tour within France (consider the road tolls if you take the motorways), but you skip the second ferry ride. Whether or not the option is favorable schedule- and cost-wise? I don't know, I never tried neither route.
I am happy you consider this long journey anyways!

Myself and the Lovely Mrs TeDeum have used the ferry last year and this year, last year for the RTT in the Dordogne and this year for a trip to Brussels. We never used a motorway and really enjoyed the red and yellow roads. The problem is synching the ferry with the your plans as there is only one boat and each trip is overnight so you can't always fit with the dates you want. Sometimes it works to go to France direct and come back the through the UK. We have plenty of time to sort this out. If you were coming to Ireland from Germany or France the Cherbourg-Rosslare ferry is good value outside the school holidays.
