Speaking in favour of IOM there is a wide range of activities, but I think use of two wheels is helped by biking culture generally which extends to cycling and off road
if anyone fancies having a go at cycling the course on hired bikes (or else shipping their own bikes beforehand), with a stop at a couple of pubs en route the link below covers some discussion on the TT forum

Even though I voted for Portugal, I strongly suspect that the 9 who voted for Yorkshire/Highlands if faced with a choice of Portugal or IOM would elect IOM, so this is the likely overall winner.
